Today is the 7th day...one week has passed, two more weeks to go.
This is getting easier. There are so many positives like I have mentioned on past posts. There is also negatives (the headaches, nausea, gas, stomach aches). Gas and stomach pain are mostly related to the increased fiber in the diet. Also eating raw vegetables increases the stomach pain because the system can not digest some fibers. And as we age, the process slows down.
I have been reading that some people, once they switch to a vegan diet they have tasted cow milk or meats and find it repulsive. I tested this out myself. I had my morning coffee with cow milk. My finding: it smelled and tasted a little cowy. If you have lived in a farm and had the experience to milk a cow...that is the cowy smell I am referring too. The all senses feeling of the moment - the cow itself, the warm milk and the cow chewing the grass and going mooo. Yea, it sounds weird, but that is how I can explain it. It did not taste bad, this is where the mind takes over....while you drink the milk you imagine the cow attached to the milking hoses sucking every single drop and more out of it...it is gross and you choose not to drink it. Then you recall the gentle farmer, taking pride of his cow, caressing and asking the cow for milk....that is a totally different picture. My father was that gentle farmer...I love you dad.
Breakfast: coffee with cow milk, hot wheat farina with soy milk and a drizzle of maple syrup.
Lunch: left over red rice and pigeon peas

Dinner: potato gnocchi (made from potato and whole wheat flour) with a spinach/tomato sauce,
banana
I love my tomato sauce. It takes me to happy land!
One week done and over with. As you can see my mind is made up. I decided to try a vegan diet to experience by myself the results. I see this as a slow-down aha moment. To be thoughtful and mindful as to what goes in my body. I am a firm believer that moderation is the key to a healthier, happy life. Increase the vegetables, drink the right amount of water, listen to your body, eat a rainbow of colors and textures, and portion size.
