Ok, day 2 is over. Moving forward with this.
Do I feel different? I feel tingling in my skin, but it could be the cold weather here in Philly! I did experience an annoying headache yesterday, somewhat like the one when I deprive myself of coffee. Coffee, it is the hardest one. Coffee is always there for me, in my ups and downs, my confident, my support. I want it in my life! ...sorry but coffee stays, I will cut down on the amount I drink, but no way you taking it away...I'll balance my pH somehow.
I also noticed a knot in my stomach, no pain, just kinda when you get the stomach virus. I am attributing this to the increased bean amount, to the intestinal system processing a healthier diet and to yoga. This statement still needs to be proved, that's what I choose to believe.
I do feel more energized, not by much. By the time I get home from work, I used to slouch in the couch for 2 hours watching tv. Sometimes not even able to cook dinner...very lazy. When I arrived home, I followed my routine...coffee, couch, and click the tv. Two minutes after, I was in my kitchen whipping up dinner. It took me about 2 hours to do everything, chopping vegetables, grinding sesame seeds, and enjoying my meal. So this was my food for the day:
Breakfast: coffee still using cow milk, and dry pops cereal
I know, I need to put the cow milk down. The one thing I enjoy the most, my coffee, can not be taken from me just like that. And the extra sugary cereal it's like a support blanket. By the end of the week the cereal will stop. Glad to know I got my soy milk later in the day!
Snack: a green apple....ohh so sour, maybe that's the cause of my stomach upset:(
Lunch: Asian-style noodles - egg noodles! It just hit me.... no to eggs for the next 21 days. How can I missed this...not feeling guilty, just mindful. Ok there's always tomorrow. My noodles contained carrots, onions, scallions, celery, garlic, canola oil, wasabi peanuts, pepper flakes and other spices. It was very spicy. I am seeing a pattern here with my stomach...
I did not have a mid afternoon snack. Drank a second cup of coffee.
Dinner: white rice and great northern white bean soup
I have left my beans soaking in water for the day. Then I boiled them adding chunks of celery, carrot, onion, tomato, frozen corn, bay leaf, sofrito and other spices. Had enough for couple days. This will be frozen for another time. I can not follow the idea of having the same meals day after day. Boredom hits and you look for excitement in the meat isle. Currently I have white rice in my pantry, rice is expensive, I have to save a penny. In the future I will purchase the healthier brown rice.
I had plenty of beans to make veggie patties. So I also scooped that up. Boiled white beans, carrots, celery, onion, orange pepper, ginger, cilantro, sesame seeds and spiced to my liking. That will be tomorrow's dinner!
Another recipe I was excited to do was the tahini. I just soaked the sesame seeds in water then grind them into a paste. Stored for future use. The leftover paste in the grinder turned into a refreshing sesame seed drink. Just added some soy milk, cinnamon, sugar and ice. Very good!
I keep on reminding myself to get bottled water. Need to up the intake. I walked through the meat isle in the market to experience my attitude towards it. I do not repulse it neither crave it.
